tawâw: Progressive Indigenous Cuisine is the debut cookbook from acclaimed chef Shane M. Chartrand of the Enoch Cree Nation. In which he explores the reawakening of Indigenous cuisine and what it means to cook, eat, and share food in our homes and communities. Raised by a Métis father and a Mi’kmaw-Irish mother, Chartrand shares his culinary journey from childhood in Central Alberta to his role as executive chef at the acclaimed SC Restaurant in the River Cree Resort & Casino, located on Treaty 6 Territory in Enoch, Alberta.
tawâw, a Cree word meaning “come in, you’re welcome, there’s room,” features over seventy-five recipes alongside a deeply personal narrative shaped by ten years of exploration and learning with other First Nations communities. It is more than a cookbook, it is a celebration of Indigenous cuisine, culture, and collaboration, combining ingredients, technique, and cultural resurgence.
